Fresh, vibrant, and packed with flavour, this butter bean dish is your new go-to for easy spring dining.
Feeds up to four as side and two as a main.

Ingredients
1. Slice your red pepper, red onion, garlic and place in roasted dish with your cherry tomatoes. Add your dry spices, vinegar, olive oil and season salt and pepper. Roast in oven at 200 degrees for about 10 - 12 mins.
2. Drain your butter beans and rinse. Cook your green beans in salted water and cut in half. And chop your cucumber. Add all these into your serving dish and season with salt and pepper.
3. Once your roasted vegetables and spices are cooked through add to the butter bean salad while hot and toss all ingredients together to get all flavours combined.
4. Add your capers and herbs once it has cooled slightly so that the herbs don’t wilt.
5. Season to taste and add lemon and olive oil if desired.
